I live in Australia. It’s starting to feel like summer. I’m longing for days by the beach, fresh mangoes, tropical rain and the buzzing sound of crickets at dusk. I’m so grateful I experienced a touch of this by the south coast this past weekend. In December, after my final pop-up of the year, I’ll take a summer break to enjoy the little moments with my loved ones. That means more creativity in the kitchen and recipe testing with seasonal produce. Possibly, a little kitchen touch-up. I feel like I need to mute the colours in my kitchen for the minute. Colour is noisy sometimes. For me, that is. I baked this cake when citrus was flourishing. It really feels like Spring/Summer. If you’re in the Northern Hemisphere, it may be a little glimmer of warmth amidst the cold.
